Crispy Finnish Funnel Cake Biscuits
1st of May means big celebrations for Finns! We have a few traditional 1st of May treats like mead (usually homemade), little donuts and fried funnel cakes (in Finland we call them “tippaleipä”).
Funnel cakes are crispy fried batter, topped with powdered sugar - simple but yummy. I’ve always bought them readymade, but the only problem is that the funnel cakes sold are always so big – I don’t think anyone can eat that much fried batter alone. So why not make my own version, but as thin crispy biscuits!
This recipe is super simple and quick to prepare and the biscuits fun to make!
Crispy Finnish Funnel Cake Biscuits
Active: 15–20 min.
Batter:
- 3 eggs
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1/2 cup milk (1.25 dl)
- 1 1/4 cups all-purpose flour (~ 3 dl + 1 tbsp)
- 2 tsp cinnamon
- (1 tsp cardamom or other flavorings of your choice)
- 1 tsp lemon zest
Also:
- 2-2 1/2 cups canola oil
- powdered sugar
Mix all the batter ingredients together in a bowl. Pour into a piping bag with a small piping tip.
Heat up the oil in a small frying pan (or sauce pan). The temperature should be about 180C (356F).
Pipe small circles and curves into the oil, forming a round biscuit. Let fry until the bottom is beautiful golden brown and crispy. Turn and fry until browned on the other side as well. Lift with a slotted spoon onto a piece of kitchen paper to get rid of the extra oil.
Dust the biscuits with some powdered sugar. Enjoy!
